Grilled Catfish with Cream Sauce and Capers - T-Coon’s Restaurant


David Billeaud, founder of T-Coon’s Restaurant in Lafayette Louisiana, wants his customers to know that his low glycemic meals are immensely flavorful.  So he released one of his recipes.
Grilled Catfish with Cream Sauce and Capers is made with freshly caught fish which has been coated with Bacon drippings then grilled.  “I grill the freshly caught fish covered with a few drops of bacon dripping.  In a side pan, I reduce some Heavy Cream with Olive Oil, Butter, Garlic, and Capers and add seasoning, and of course the seasoning is “The Stuff,” the seasoning salt I manufacture and sell.  Once the Cream Sauce is reduced and as thick as possible, it is then drizzled on top of the catfish.  I guarantee, you've never tasted anything like it and it's totally ketogenic!" - David
